Apricot Rice Kugel

This is a keeper. It's almost like a rice cake with just a hint of sweetness. I got lots of complements with it and it got scarfed down in a hurry.

Cook:
1-1/2 c uncooked rice
Mix with the cooked rice:
3/4 c sugar
3/4 c apricot nectar
4 eggs beaten
1 T melted butter
1/2 c raisins (optional)
1/4 c chopped nuts (optional)

Pour into casserole dish and bake uncovered for 1 hour or until all ingredients are set.

Carrot Tzimmes

This recipe doesn't take much to prepare, it can be started reasonably early before dinner guests arrive and is rather hands off. The word tzimmes means "something mixed up" or "a big fuss or mess."

1-1/2 lb carrots peeled and sliced
3 T butter
1/2 t salt
1 c water
1/2 c raisins
1 c pitted prunes
6 T brown sugar
1/2 t cinnamon
1/4 t cloves
1 T lemon juice
grated peel of one orange
2 T honey

Melt the butter and saute the carrots for 5 minutes. Add water and bring to a boil. Turn down the heat and add the remaining ingredients. Cover and simmer for 2 hours. Uncover and continue to simmer for 20 minutes.

charoset

You can't have a Passover celebration without charoset. Besides, the kids loves this with matzos.

1/2 c walnuts chopped fine
3 large firm apples grated
2 to 3 T honey
1 t ground cinnamon
1/3 c grape juice (or sweet red wine)

Mix, let it sit overnight so it will brown.
