This is a nice soft sponge cake recipe that I got from a friend.

8" (or 9") Spring form cake pan 30min
Wet ingredients:

  • 5 (6) egg yolk
  • 1.5 (2) T sugar
  • 5 (6) T Milk or Orange juice
  • 5 (6) T vegetable oil
  • 1/4 t vanilla
  • 1 T rum

Dry ingredients:

  • 1 (+) C cake flour
  • 1/4 t baking powder
  • 1/2 (+) T corn starch

Egg white:

  • 5 (6) large egg white
  • 1/4 t salt
  • 5 (6) T sugar
  • 1/4 t cream of tartar or white vinegar

Combine all the wet ingredients (except egg yolks). Mix in the dry ingredients. Add the egg yolks and combine. Beat the egg white mixture slowly until medium peak. Add 1/3 of the egg white mixture to the wet mixture and mix together. Add the wet mixture to the remaining egg white and mix together gently. Pour into ungreased spring form pan. Bake for 30 minutes at 350 degrees. Invert the pan to cool. Gently use a knife to help remove the cake.


Lemon Pound Cake

This is not a traditional pound cake by my definition as it's not very dense, but it is slightly denser than a cake mixes. I don't have a 12" tube or bundt pan so I ended up baking mine in a 10" bundt pan and an 8"x8" pan. This is easy to make and I liked the taste. I think next time I may try just making 2/3 of the batter and bake it in a 13x9 pan (of course adjust the baking times accordingly).

1 c canola oil
6 eggs
1t lemon extract
2-1/2 c sugar
1 c milk
2-1/2 c plus 2 T. flour
1 t baking powder
3/4 t salt

Preheat oven to 375 degrees. Grease a 12" tube or bundt pan. In a mixer bowl, combine ingredients one at a time while mixing on low. Increase speed to medium, beat well for 5 minutes. Pour into prepared pan. Bake for 30-45 minutes or until cake tests done. Cool 15 minutes, removed from pan. Glaze with lemon glaze or dust with powdered sugar.

Lemon Glaze:
Juice 2 fresh lemons, grate rind of 1 fresh lemon. Add powdered sugar to juice and rind while mixing with a wire whisk until glaze is of desired consistency. Pour over the cake.


Wacky Cake

Just got this recipe in an email. Sounds easy. I'll see if I can make it today and see how it turns out.

This recipe makes an 8x8-inch cake. Double it to make a 9x13-inch cake.

1 1/3 cup flour
1 cup brown sugar
1/4 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup oil
1 teaspoon vinegar
1/2 teaspoon vanilla
1 cup water

Mix together all ingredients in the above order and pour into an ungreased 8x8x2 pan. Bake at 350 degrees for 35 minutes.
