Yummy Yam Casserole

Got this at allrecipes.com and thought that I'd try it this year.

4 pounds yams
2 eggs
1/4 cup brown sugar
2 tablespoons butter, melted
1 teaspoon salt
1 teaspoon ground cinnamon
1/8 teaspoon ground allspice
1/8 teaspoon ground nutmeg
6 ounces pecan halves
1/3 cup brown sugar
1/4 cup melted butter

Preheat oven to 375 degrees F (190 degrees C).

Poke yams in several places with a fork, then cook them on high power in microwave oven until heated through and soft, about 20 minutes. When cooled, remove skins and place the yams in a large bowl.

Beat yams until smooth. Then beat in one egg at a time, blending after each addition. Stir in 1/4 cup brown sugar, 1/8 cup melted butter, salt, cinnamon, allspice and nutmeg; beat until the mixture is light and fluffy.

Transfer mixture to an ungreased 3 quart casserole dish. Arrange the pecans in a single layer on top. Sprinkle with remaining brown sugar and drizzle 1/4 cup melted butter over the top.

Bake for 25 minutes in the preheated oven, or until browned and bubbly.

Applebee's Oriental Chicken Salad dressing

I love the Oriental Chicken Salad from Applebee’s. When we used to eat out it was always a toss up between their riblets or the salad. I actually don’t go through the trouble of all the salad fixings--Napa cabbage, red cabbage, carrots, or the chicken (just heat up a few frozen chicken nuggets if you must). Just straight salad with some chow mein noodles plus this dressing and I’m good to go for lunch.

Mix together:
3 tablespoons Honey
1 1/2 tablespoons Rice Wine Vinegar
1/4 cup Mayonnaise
1 teaspoon Dijon Mustard
1/8 teaspoon Sesame Oil

Apricot Rice Kugel

This is a keeper. It's almost like a rice cake with just a hint of sweetness. I got lots of complements with it and it got scarfed down in a hurry.

Cook:
1-1/2 c uncooked rice
Mix with the cooked rice:
3/4 c sugar
3/4 c apricot nectar
4 eggs beaten
1 T melted butter
1/2 c raisins (optional)
1/4 c chopped nuts (optional)

Pour into casserole dish and bake uncovered for 1 hour or until all ingredients are set.
