Chinese birthday buns (sho tao)

2 c bean paste (if too mushy add a little lard)
1 recipe of dough
leaves: 1/2 c flour, 1/6 c water, 3 drops green food coloring

Make the dough for the buns and let rise.

Mix the dough for the leaves, cover and let rest for 20-30 minutes. Roll out the leaf dough till thin and cut out 48 leaves and make some leaf-like indentations with a knife.

Divide the yeast dough into 24 equal parts. Roll out each part into a flat circle a bit thicker in the middle. Place some filling in the middle of the circle close the circle. Now shape the enclosed dough ball into a peach like shape with the middle of the dough circle coming to a point. Use some water to attach two leaves to the bottom (seam side) of the shape and place it onto a sheet, cover and let rise for 10-20 minutes.

Steam the bins for 12 minutes. While the buns are hot, use a butter knife to make an indentation from between the leaves to the tip of the shape. Place a few drops of red food coloring and a little water in a bowl. Use a toothbrush and flick the food coloring onto the indented side of the bun. I run my thumb across the brush (wear a glove if you don't want to have a red thumb.
